Xue Hua Fei Cold & Hot Drinks

What a Watermelon!!!
Mad huge! Mad awesome! Lots of stuffs in a watermelon "bowl".. So refreshing!
Costs you only $5! Biggest and cheapest i ever seen!
This girl ah...
wanted to eat the whole thing by herself (kidding).. but I tell you ah... 1 person cannot finish it one. Require 3 to 4 people to share.

Jelly Cheesecake

Making Jelly Cheesecake is super easy. If i can do it, so you can. (^_^)
My first time was............  like this --->

Okay, i admit the appearance is damn ugly. But the taste is awesome okay! Don't believe? you can ask my mother or sister.
It's because the box is quite big. Thus, the jelly was flowed out. Further down, you might be able to understand. The 2nd time, i used the smaller box.

Sharing the recipe with you.
Ingredients:
 
Biscuit base:
310g Digestive Biscuits
140g Melted Butter
Cheesecake filling:
250g Cream Cheese
10g (1tbsp) Gelatine Powder
50g Sugar
½ cup hot water
½ tsp vanilla essence
Jelly topping:
1 box of jelly
1 cup of boiling hot water
1 cup of cold water
For biscuit base layer:
- Put the digestives biscuits in a ziplock bag and crush it.
- Melt the butter (of course, don't let it burn.) And mix with the crush biscuits.
- Press firmly onto the box.
- Chill it until it hard. It can put inside the fridge too. As long as it harden, can liao.

For cheesecake layer:
While waiting for the biscuit layer to be harden, let's do the 2nd layer.
- Dissolve the gelatin powder in the boiling water in a bowl. Keep warm.
- Beat the cream cheese, sugar and vanilla essence until smooth and creamy.
The recipe says use an electric mixer but I don’t have it. So i used a whisk lor.
- Blend in the gelatin solution and mix well.
Once the biscuit layer is harden, pour the cream cheese mixture on top of the biscuit layer. Then chill for 3-4 hours.
For jelly layer which is the last one:
I used this type of jelly.
- Dissolve the jelly crystals in boiling water.
- Add in the cold water after jelly dissolves
- Pour the jelly onto the cream cheese mixture.
- Chill in the fridge until jelly is set!
Lastly, cut and enjoy eating!!!
